Cola Chicken

4 skinless, boneless Chicken Breasts
1/2 cup low carb ketchup
8 ounces of Diet Rite Cola (or any cola sweetened with Splenda. If you use diet Coke or Pepsi the sweetener cooks off)

In pan mix ketchup and cola until smooth, add chicken.

Cover for 45 minutes on med-low heat (just barely bubbling)
Take cover off, remove chicken and keep warm. Turn heat up to med-high and cook gravy until thickened. This will take about 15 minutes.

Add chicken back to pan for a few minutes to heat, spooning thickened gravy over breasts.

This makes a very tasty BBQ sauce! If you have leftover sauce you can use it to BBQ other meats like pork chops, chicken pieces, or veggies.
