Italian Sausages with onions, mushrooms & peppers


Over a medium heat in a heavy frying pan, with a few tsp. of Olive Oil or bacon fat brown the sausages on all sides. Add 1/2 cup of sliced onions and 1 cup of sliced green peppers, brown the veggies and sausages for another 5-8 minutes, turning often. Add a pkg. of sliced fresh mushrooms and 1 cup of water or low carb tomato sauce and simmer covered for 1/2 hour. Check to see if it needs a little added water and add if needed (you don't want to burn it!), then simmer for another 15 min.
